Cooking Pozole Rojo: A Step-by-Step Guide

Ingredients:

  • 1 lb pork shoulder, cut into bite-sized pieces

  • 2 cans (30 oz) hominy corn, drained and rinsed

  • 1 onion, chopped

  • 4 cloves garlic, minced

  • 2 dried guajillo peppers, stemmed and seeded

  • 2 dried pasilla peppers, stemmed and seeded

  • 1 dried ancho pepper, stemmed and seeded

  • 1 teaspoon cumin

  • 1 teaspoon oregano

  • Salt and pepper to taste

  • Garnishes: chopped cilantro, sliced radishes, shredded cabbage, lime wedges, diced onion, and avocado slices

In a large pot, combine the pork shoulder, chopped onion, minced garlic, and enough water to cover. Bring to a boil, then reduce heat and simmer for 1-2 hours, until the pork is tender and cooked through.


While the pork is cooking, prepare the dried peppers. Heat a dry skillet over medium heat and toast the peppers for 1-2 minutes on each side, until fragrant. Remove from heat and soak the peppers in hot water for 20-30 minutes, until softened.


Once softened, transfer the soaked peppers to a blender along with a cup of the soaking liquid. Add the cumin, oregano, salt, and pepper, and blend until smooth.


Strain the pepper mixture through a fine mesh sieve, discarding any solids, to create a smooth sauce.


Once the pork is tender, add the hominy corn and strained pepper sauce to the pot. Stir to combine and simmer for an additional 30 minutes to allow the flavors to meld together.


Taste and adjust seasoning as needed with salt and pepper. Serve hot, garnished with chopped cilantro, sliced radishes, shredded cabbage, lime wedges, diced onion, and avocado slices. Enjoy!
